The black-eyed beans are cream coloured and have a black eye whence the name. The beans stem from Africa, but are especially popular in America nowadays. They have a sweet taste and the structure resembles that of a pea.

How to prepare them

  1. Rinse the beans.
  2. Soak the beans for about 3 hours in water.
  3. Rinse the beans again.
  4. Cook them for 30 to 45 minutes.
