Borlotti beans are native to South America and Mexico. You can recognize the beans by their dotted pattern — which disappears when the beans are cooked. The beans are quite sweet and have a nutty aftertaste. They can be used in many delicious dishes and they are also a perfect meat substitute.

How to prepare them

  1. Rinse the beans.
  2. Soak them for about 12 hours.
  3. Cook the beans for 45 minutes.
  4. Taste them to see whether they are cooked and cook them a little longer to your liking.
